Best Pot Roast Ever…Seriously, It’s So Good!
Ya’ll I love a good ole crockpot dinner. It’s low maintenance and a crowd pleaser, plus so many ways to use the leftovers (if there are any). I use a chuck beef roast (I get them at Sam’s). I prep it the night before so it marianades in all the stuff prior to cooking the next day.
Ingredients:
Beef Chuck Roast
Olive oil
Montreal Steak Seasoning
Red Onion (any onion works, I just prefer red)
Jalapeno (optional, I tend not to add one anymore so it’s not to spicy for the boys)
Dales Original Steak Seasoning
Instructions:
Pat the roast dry. Put into a crockpot. Drizzle olive oil and massage into both sides of the roast. Sprinkle as little or as much Montreal Steak seasoning as you want. I typically only do this on the top. Cut the onion however you want and place on top and around the roast. Pour the Dales over top. I would say about two tablespoons, give or take depending on how big the roast is. I recommend less is better. Put the lid on it and keep in the refrigerator overnight. I start mine around 8:00-8:30am and cook on low for at least eight hours.
You can add potatoes and carrots if you want after about four hours. Lately, I’ve been making our vegetables on the side. We like noodles or sweet potatoes and have pees or brussel sprouts. You can’t go wrong with any side you choose.
Leftovers...ok, let me tell you all the things I have made with the leftovers. First, I always save the broth. I like to freeze it and use it in soup. As far as the meat, I’ve made nachos, taquitos, breakfast hash, jalapeno cheese soup, bbq pizza and more. There is so much you can do.
